Single Crochet 2 Together (sc2tog)
In a US pattern this is called single crochet 2 together (sc2tog). In a UK pattern the same stitch is called double crochet 2 together (dc2tog). Same stitch, different name — check which country wrote your pattern before you start.
A decrease. Two stitches are started and then closed together so they become one, reducing the stitch count by one.
The Japanese name 細編み2目一度 (koma-ami futame ichido) literally means "two fine stitches at once".

For amigurumi, the invisible decrease variant (front loops only) leaves a much smoother surface than the standard version.
